– 1 lb ground chicken
– 1 onion, diced
– 3 cloves garlic, minced
-1-2 ribs of celery diced
– 1 can (19 oz) black beans, drained and rinsed
– 1 can (15 oz) kidney beans, drained and rinsed
– 1 can (10 oz) diced tomatoes
– 1 can corn kernels
– 4 cups chicken broth
– 1 cup buffalo sauce (adjust to taste)
-1 small can pizza sauce
– 1 teaspoon chili powder
– 1 teaspoon cumin
-4 0z or 113 grams of cream cheese
-Cornstarch slurry when done (optional) 2 table spoons cornstarch and 1/3 cup water mixed
– Salt and pepper to taste
– Optional toppings: shredded cheddar cheese, green onions, sour cream Instructions
Method
In a frying pan over medium to medium high heat fry up your ground chicken in a few tablespoons spoons of cooking oil. Add salt and pepper to taste and just before chicken is cooked add your onion, celery and garlic to soften a bit before adding to crockpot.
When done frying and chicken is fully cooked add to crockpot
Pour your chicken broth over meat. Add everything else except your cream cheese and cornstarch slury.
In video I added my pizza sauce with cream cheese but you can just add it with everything else.
Cook on high for a total of 3.5 -4 hours or double that time if on low
1 hour before done add your cream cheese in small bits. Mix through and cover
When done you can thicken with your slurry
