In the hot summers in pakistan, Kulfa which is basically a frozen Pakistani / Indian dessert is much sought after

Kulfa or kulfi is a popular street food here in Pakistan

Its a frozen milk based dessert, perfect for a hot summer day. The authentic recipe calls for cooking down milk and sugar for hours and hours till its reduced to half.

An easier version is to boil the milk and add bread crumbs, mawa (dried whole milk), and sugar while stirring. The cream layer formed on the boiling milk is scooped initially and added in the end to thicken the milk.

Shahi/malai Kulfa recipe can be prepared at home with Desi ingredients like milk, sugar, kewra water, Khoya, green cardamoms, condensed milk and cream. In order to prepare Shahi Kulfa, rabri is prepared. Garnish Shahi Kulfa with almonds and pistachios.

Milk
Corn flour
Sugar

Kewra water

Tips and Tricks to prepare Kulfi

The more sugar you add, the softer kulfi will be when frozen.

For simmering the milk, use a wide pot with a large surface area to hasten the process

While boiling the milk, keep stirring it frequently else it will burn. Sugar helps in scalding down.

When you freeze the kulfi, it will expand so leave some space in the container.

Kulfa ice cream is a much loved dessert.

There are many ways a kulfi can be made.

You can make Shahi Kulfa for family gatherings or Eid dinner parties as a dessert

Kulfa is a popular food available anywhere, especially in tourist locations

Traditionally it is made from thickening milk to rabdi

i have added khoya (mawa). Khoya is evaporated milk and imparts a lot of flavor and taste to the kulfa.

This KULFA ICECREAM recipe is very easy and does not take a lot of time.

I have added pistachios and almonds as dry fruits

Milk is continuously simmered and reduced on a low flame till it reaches a semi thick consistency.
