VEGETABLE SOUP RECIPE:
1 bag frozen mixed veggies
1 can petite diced tomatoes
1 large container tomato juice
Salt, Pepper, and Garlic Powder to taste
Cook on high 4 hours

POTATO SOUP RECIPE:
2 ½ lbs of potatoes – peeled and diced
1 can evaporated milk
1 stick of butter – optional
Garlic powder and minced onion to taste – optional
Salt and Pepper to taste

Cover potatoes with water and seasonings. Bring to a boil and cook until potatoes are fork tender. Add butter and mash potatoes to preferred consistency. Add 1 can of evaporated milk and let simmer for 15 mins.

TOMATO PIE RECIPE:
2 tomatoes sliced
1 9” pie crust
⅓ onion diced
4 oz cheddar cheese shredded
4 oz mozzarella cheese shredded

Bake pie crust at 350 degrees for 8 mins.
Prepare tomatoes: Slice and place on a paper towel lined baking sheet. Sprinkle with salt and let sit for 10-15 mins in order to draw out liquid.

Reserve some of your cheese for the top of the pie. Mix remaining cheese with 1 cup of mayo.

Once the pie crust is done, place a layer of tomatoes on the bottom, sprinkle with onion and half of the cheese/mayo mixture. Repeat layer. Top with remaining shredded cheese.
Bake at 350 degrees for 30 mins.

BLACK BEAN AND ZUCCHINI ENCHILADA RECIPE:
10 tortillas
1 can red enchilada sauce
1 can Diced tomatoes with green chiles
½ onion diced
1 zucchini diced
½ of Black beans drained and rinsed
4 oz cheddar cheese shredded

Saute zucchini and onion in a skillet with oil until tender. Add in tomatoes and black beans. Season with salt, pepper, cumin (optional), and garlic powder (optional) to taste.
Add ¼ of enchilada sauce to the bottom of a 9×13 casserole dish. Add filling to the tortillas and roll it up! Place in your casserole dish. Cover with enchilada sauce and cheese. Bake at 350 for 30 mins.
