KETO EGG MCMUFFIN FOR AN EASY KETO BREAKFAST

Mornings run anything but smoothly in my house so that I’m always on the hunt for an easy keto breakfast recipe we can eat on the go. I used to love those Jimmy Dean breakfast sandwiches and McDonald’s Egg McMuffins, so I decided to recreate a keto version.

This keto breakfast sandwich can be frozen ahead of time and microwaved the morning you need it. You better make they keto egg mcmuffins in bulk to last you the whole week!

In this video, I show you how to make the keto muffin or biscuit portion of the breakfast sandwich. You can add you choice of filling – from bacon, egg, sausage, cheese, almond butter, avocado, etc. I adapted the keto muffin recipe from Low Carb Yum. Her English Muffin recipe uses almond butter to decrease the eggy flavor from the four eggs added to the recipe.

KETO EGG MCMUFFIN RECIPE

6 tablespoons melted butter
4 eggs
⅓ cup almond butter
1 tablespoon heavy cream
¼ cup coconut flour
1 teaspoon baking powder
½ teaspoon salt

Combine the wet ingredients. Slowly add in the dry ingredients.
Pour evenly into 8 greased muffin tins or ramekins.
Bake at 350 for 7 minutes. If you want to microwave, cook for 1 – 1.5 minutes per ramekin.
